The wine was matured for a minimum of 36 months on its lees before being matured on the final cork for 6 months before release.

Onion skin in colour, this sparkling wine has a sophisticated palate, good fruit definition, bright acidity and delicate bubbles before a very dry finish. This Pinot-heavy cuvee shows ripe cherries, red lollipop and raspberry aromas. These are followed by some hints of grapefruit and wild rose. It has a deliciously full, long finish.
